Jamaican Callaloo Fried Rice Recipe

With our strong Chinese heritage in the Caribbean, fried rice is a natural dish when it comes to Caribbean culinary culture. For this gluten free and vegetarian fried rice you'll need... 2-3 cups cooked rice (chilled) 1 tablespoon veg oil 1 shallot (or small onion) 1 clove garlic 1/4 scotch bonnet pepper (optional) 1 teaspoon soy sauce (see note below) 1/2 cup diced bell pepper 1/3 cup diced carrot 1 cup prepared Jamaican callaloo (trimmed) 2 okra 1/2 teaspoon sesame oil

Notes. Be sure to use gluten free soy sauce if doing this gluten friendly and if you want more of that vegetable - add about a cup more of the prepared Jamaican callaloo
