Ingredients:

  • 2.5 to 3 pounds goat meat, cut into chunks

  • 2 tablespoons curry powder

  • 1 tablespoon all-purpose seasoning

  • 1 teaspoon thyme, dried

  • 1 teaspoon pimento (allspice) seeds, crushed

  • 2 tablespoons vegetable or coconut oil

  • 1 large onion, chopped

  • 4 garlic cloves, minced

  • 2 scallions, chopped

  • 1 to 2 pieces of ginger

  • 2 sprigs thyme

  • 2 scotch bonnet peppers, seeded and finely chopped

  • 2 cups potatoes, peeled and diced

  • 2 cups carrots, peeled and diced

  • 3 cups water or beef broth

  • Salt and pepper to taste

  • 1 tablespoon of white rum (optional)

Instructions:

1. Marinate the Goat:

  • In a large, heavy-bottomed pot, heat vegetable oil over medium-high heat add curry powder, ginger and garlic. Brown the marinated goat meat in batches, ensuring a golden curry look on all sides. Remove the browned meat and set it aside.

3. Sauté Aromatics:

  • In the same pot, add chopped onions, minced garlic, scallions, thyme sprigs, and chopped scotch bonnet peppers. Sauté until the onions are translucent and the kitchen is filled with the enticing aroma of the spices.

4. Return Meat to the Pot:

  • Return the browned goat meat to the pot, stirring to combine with the sautéed aromatics.


5. Add Potatoes, carrots and Liquid:

  • Add diced potatoes and carrots to the pot, distributing them evenly among the meat. Pour in water or beef broth, ensuring the meat, potatoes and carrots are mostly submerged. Bring the liquid to a boil.


6. Simmer to Perfection:

  • Reduce the heat to low, cover the pot, and let the curry goat simmer for 2 to 2.5 hours or until the meat is tender and falling off the bone. Stir occasionally to prevent sticking, and add more liquid if needed.

7. Adjust Seasonings:

  • Season the curry goat with salt and pepper to taste. Adjust the curry level according to your preference.

8. Add rum 5 minutes prior to the end of cook time.
