Conch Fritters Recipe


Ingredients:

  • 1 pound conch meat, finely chopped

  • 1 cup all-purpose flour

  • 1 teaspoon baking powder

  • 1 small onion, finely chopped

  • 1 bell pepper, finely chopped

  • 2 cloves garlic, minced

  • 2 stalks celery, finely chopped

  • 1 scotch bonnet pepper, seeded and finely chopped (optional, adjust to taste)

  • 2 tablespoons fresh parsley, chopped

  • 2 tablespoons fresh cilantro, chopped

  • 2 eggs, lightly beaten

  • 1/4 cup milk

  • 1 tablespoon lime juice

  • Salt and pepper to taste

  • Oil for frying


Instructions:

  1. Prepare the Conch: Rinse the conch meat thoroughly under cold water to remove any grit or sand. Pat dry with paper towels. Finely chop the conch meat and set aside.

  2. Mix Dry Ingredients: In a large mixing bowl, sift together the flour and baking powder. Season with salt and pepper to taste.

  3. Prepare Vegetables: Finely chop the onion, bell pepper, garlic, celery, and scotch bonnet pepper. Combine these vegetables with the chopped conch meat in a bowl.

  4. Combine Wet Ingredients: In a separate bowl, whisk together the eggs, milk, and lime juice until well combined.

  5. Combine Ingredients: Gradually add the wet ingredients to the dry ingredients, stirring until a smooth batter forms. Fold in the chopped conch meat and vegetable mixture until evenly distributed throughout the batter.

  6. Heat Oil: In a deep skillet or Dutch oven, heat oil over medium-high heat until it reaches 350°F (180°C).

  7. Fry the Fritters: Using a spoon or scoop, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry the fritters in batches for 2-3 minutes on each side, or until golden brown and crispy.
