Here's a recipe for Kabritu Stoba, a delicious and traditional goat stew from the Caribbean island of Bonaire:


  • 2 lbs goat meat, cut into small pieces

  • 2 tbsp olive oil

  • 2 onions, chopped

  • 4 garlic cloves, minced

  • 2 tomatoes, chopped

  • 1 bell pepper, chopped

  • 2 tbsp tomato paste

  • 1 tbsp cumin

  • 1 tbsp coriander

  • 1 tbsp thyme

  • 2 bay leaves

  • 2 cups beef or goat broth

  • Salt and pepper, to taste


  1. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the goat meat and brown on all sides, stirring occasionally, for about 5-7 minutes.

  2. Remove the goat meat from the pot and set it aside. Add the onions and garlic to the same pot and sauté for 2-3 minutes until they begin to soften.

  3. Add the chopped tomatoes and bell pepper and cook for another 3-4 minutes.

  4. Add the tomato paste, cumin, coriander, thyme, and bay leaves, and stir to combine.

  5. Return the goat meat to the pot and add enough beef or goat broth to cover the meat. Bring to a boil, then reduce the heat to low and let it simmer for 1-2 hours, or until the meat is tender and falls off the bone.
