1 pound chicken breast, diced
2 cups cooked rice
1 cup shredded Gouda cheese
1/2 cup raisins
1/4 cup sliced green olives
1/4 cup capers
1/4 cup chopped onion
2 cloves garlic, minced
1 tomato, diced
2 tablespoons olive oil
Salt and pepper to taste
Instructions:
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, add olive oil and sauté onions and garlic until fragrant, about 2 minutes.
Add chicken and cook until no longer pink.
Add raisins, olives, capers, and tomato and stir to combine.
Add cooked rice and mix everything together.
Grease a baking dish with butter or oil.
Spread half of the rice mixture into the bottom of the baking dish.
Sprinkle half of the shredded cheese on top of the rice mixture.

1/2 teaspoon cumin
1/2 teaspoon paprika
Salt and pepper to taste
1 pound Edam cheese, sliced
1 tablespoon butter
Instructions:
Preheat the oven to 350°F (175°C).
In a large skillet over medium heat, cook the ground beef until no longer pink.
Add onions, green pepper, and garlic and cook until vegetables are tender.
Add raisins, olives, capers, cumin, paprika, salt, and pepper and mix everything together.
Grease a baking dish with butter or oil.
Layer half of the cheese slices over the bottom of the dish.
Spoon the meat mixture over the cheese slices.
Cover the meat mixture with the remaining cheese slices.
Bake for 20-25 minutes or until cheese is melted and bubbly.
Serve hot with rice and beans or plantains.
