  • ½ lb salted cod (saltfish)

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • 2 scallions (spring onions), chopped

  • 2 cloves garlic, minced

  • 1 tbsp fresh thyme leaves (or 1 tsp dried)

  • 1 tbsp finely chopped parsley

  • 1 small Scotch Bonnet pepper, finely chopped (optional for heat)

  • ½ tsp black pepper

  • ½ tsp paprika (optional)

  • ½ to ¾ cup water (adjust for desired batter thickness)

  • Oil for deep frying

  1. Prepare the Saltfish:

    • Rinse the saltfish under cold water to remove surface salt.

    • Place in a saucepan, cover with water, and boil for 10–15 minutes. Drain and repeat once more if less salty fish is desired.

    • Flake the fish into small pieces and remove any bones or skin.

  2. Mix the Batter:

    • In a large mixing bowl, combine flour, baking powder, and seasonings (onion, scallion, garlic, thyme, parsley, black pepper, paprika, and Scotch Bonnet).
