How to make Honey Roasted Rainbow Carrots

1 lb rainbow carrots (peeled and trimmed)
2 tbsp olive oil
1 ½ tbsp honey (or maple syrup for vegan option)
1 tbsp melted butter (optional for extra flavor)
½ tsp sea salt
¼ tsp black pepper
½ tsp garlic powder (optional)
1 tsp fresh thyme or rosemary (optional, but highly recommended)
Fresh parsley for garnish (optional)
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Prepare the carrots: Slice thicker carrots in half lengthwise so they roast evenly. Place them in a large bowl.
Make the glaze: In a small bowl, whisk together olive oil, honey, melted butter, salt, pepper, and garlic powder.
