Jamaican Pumpkin Pudding Recipe

I have never tried pumpkin pudding before, but after seeing this video from therainaskitchen, I so wanted to share this recipe. Please share your stories.

Jamaican Pumpkin Pudding

Step 1

Add to blender

3lbs Pumpkin (calabaza)

1/2 lbs Yellow Yam

1/2- Cup cornmeal (Fine grain)

Step 2

Combine and reserve 1 cup to make slushy topping.

4-Cups Coconut milk

1 Teaspoon Ground Nutmeg

1/2 Teaspoon Ground Cinnamon

1/2 Teaspoon Ground Ginger

1/2 Teaspoon Salt

1-1/2 Cup Brown Sugar

1/2- Stick of unsalted butter(Melted)

1-Tablespoon Vanilla extract

1-Teaspoon Mixed Spice Essence

1/2- Teaspoon Ground Cinnamon

1/4- Cup White Rum

Step 3

Pour mixture in large bowl. Combine with 2 cups of flour.

Bake for 1 hour on 350F. Add 1 cup of mixture from step 2 to the top@and bake for 15 minutes on 375 F
