    Christmas celebrations are in the air and nobody can escape the frenzy of cleaning the house, painting, sewing new curtains, purchasing new furniture and appliances (as it is out with the old and in with the new for it is customary for the new year that the new year meets a house with a new furniture or appliance whichever one it is); plus buying up of all the pricy gifts for loved ones, attending various pre-Christmas parties and even going all out with the stocking up of all varieties of local food items, fruits and vegetables, which is my favorite because I love food and there are also lots of snacks for the kids, chocolates included – that I never ever weigh myself, because I know that I will be putting on a lot of pounds over the Christmas season. The Caribbean, well Trinidad and Tobago is known for its pre-Christmas parties, with countless food and drinks in galore, that everywhere you look or turn at whatever time, day or night, there will be a number of restaurants and eatery open. We in sweet trinbago love our bellies, for we all have a sweet tooth and even when it comes to the holiday, even the greatest fitness gurus work are much harder, as they have to work effortlessly to persuade the general public to curb their cravings and try to exercise regularly, which is great, since almost everyone turn their homes upside down and move around furniture and do some minor repairs to their houses during the holiday, but eating healthier diets will only work for the few who really want to stick to a strict diet and exercise plan; but for others, christmas only comes around once a year, so we going to go all out.   • Trinbago Homemade Traditional Christmas Treats and Drinks

    To add to my previous article “A Trinbago Christmas”, as stated we in Trinidad and Tobago love our bellies and have a sweet tooth and it is overly expressed in our cooking and the wide range and varieties of traditional homemade treats and drinks we savour during the holiday season such as our signature Trinidad black cake, Pastels, Punche de Creme, Ham with mustard pickle, Ginger beer and Sorrel – a refreshing drink made from the red petals of the Sorrel plant; even the vegetarians are not to be left out for there is the polenta and for the diabetics, they can always look forward to the diabetic fruit cake or sugarless carrot cake and a lot more treats and drinks, that everyone knows there will always be more room at the table for neighbors and friends to feast on whenever they drop by and even invite those less fortunate ones to sit and enjoy the season with you and your loved ones. Trinidad Black Cake (Christmas Cake) 1 lb prunes, seeded and chopped 1 lb raisins 1 lb currants 1 lb sultanas 1/4 lb mixed peel 1/2 lb cherries, chopped in halves 1/4 lb chopped almonds 2 cups cherry brandy 2 cups rum 1 lb butter 2 1/2 cups sugar (brown sugar, preferably) 10 eggs 2 tsp grated lime peel 2 tsp vanilla extract 5 cups flour 4 tsp baking powder 2 tsp ground cinnamon 1 cup browning 1 cup mixture of rum, cherry brandy and Sherry Even thou most times the fruits are always soaked a month or more in advance, but if you are a very busy person with limited time. Few days before baking the cake, you can combine prunes, raisins, currants, sultanas, mixed peel, cherries, almonds, cherry brandy and rum to soak. On the day of baking the cake, line how much cake pans you want with double layers of wax paper, I usually use four. Cream butter and sugar until light and fluffy. Beat eggs one at a time; add lime peel and vanilla. Combine flour, baking powder and cinnamon: fold into creamed mixture gradually. Add fruit and enough browning o give it the desired colour, stir well. Put in lined baking pans full and bake in preheated oven at 250°F for the first hour; reduce heat too 200°F – 225°F for reminding 1 1/2 hours or until tester comes out clean. Prick hot cake and soak with a mixture of rum, cherry brandy and Sherry. Cover and set aside. Sorrel Drink 2 lb sorrel 2 pieces of cinnamon stick 12 cloves 2 cups sugar or more Wash sorrel and remove petals. Put cinnamon and cloves in a pot of water and bring to boil. Add sorrel petals, cover and boil for 2 minutes. Turn off heat and leave for a few hours or overnight. Strain and bottle; keep refrigerated. When ready to serve dilute in water to required strenght and sweetened to taste.   • Meet Upcoming Artist "Kurry Stain"

    Adrian Lloyd Sabastine Currie , a.k.a. ‘Kurry Stain’ , was born in the parish of St. Thomas, Jamaica on the 16th of December 1993. A Christian family raised him in Portland, where his musical background started in the church. He was also in his school choir as a tenor singer and a drummer. In 2006, Kurry Stain won a LIME deejaying competition on the Denbigh show grounds, winning the prize of a new LIME phone. He attended Portland High School and graduated with 4 CXC subjects. At the age of 18, Kurry Stain went to the heart of Kingston to pursue his musical career. "I came to Kingston and decided I had to enter some kind of talent competition so I could get a producer or manager to see the potential in me, so I tried KFC On The Verge and went to the finals but did not win. I then entered Magnum Kings and Queens but due to low votes I fell out after the first performance." A huge opportunity came his way when Kurry Stain heard about the Dancehall star Popcaan’s event, UNRULY CLASH , that hosts upcoming artists whilst they compete lyrically for the title of clash champion.     Dancehall artiste J Capri, real name Jordan Phillips was involved in a serious car accident along Barbican road early Monday morning. It was reported that the 23 year old might lost control of her Mercedes Benz car and it flipped several times before coming to stop. The singer was taken to the UWI hospital where she underwent surgery and is currently stable. The family thanks you for your encouraging comments and support, and asks that you continue to keep Jordan in prayer. There is currently a blood drive in aid of Jordan at any blood bank in Jamaica. Friends, fans and well-wishers have been sending prayers online since the incident was reported.
