- Rack Of Lamb With Herb Crust
LAMB RACKS 2 racks of lamb, - Frenched Herbed Breadcrumbs 8 oz beef paint* 12 ozs Turks Head Lamb Sauce 4 oz each of Pommery and Dijon mustards PREPARATION 1. Season lamb with salt and pepper and sear on all sides. Then rub with Dijon and Pommery mustards and roll in breadcrumbs 2. Place in 400 degree oven and cook until done as desired 3. Rest lamb at room temperature before serving LAMB DEMI-GLACE (4 cups) INGREDIENTS 5 lbs lamb bones and trimmings/fat caps 2 cups celery—diced 2 cups white onion—diced 2 cups carrot—diced 1 sprig of curly parsley with the stem 1 bay leaf 1 tbsp black peppercorns ½ cup tomato paste 2 cups red cooking wine 10 liters of cold water DIRECTIONS 1. Preheat the oven to 400 degrees. 2. In a heavy roasting pan, roast the bones for about 20 minutes with some vegetable oil drizzled over them. 3. Next add the vegetables and tomato paste. Cook until the vegetables become brown and roasted nicely, around 30 minutes. 4. Remove the pan from the oven and transfer the ingredients to a heavy large soup pot. 5. Deglaze the pan with the red wine to scrape up all the leftover brown bits from the pan. 6. Add the bits to the pot. Add the cold water and peppercorns, bay leaf and parsley, then simmer on low heat for 5 hours, skimming all the foam and impurities from the top periodically. 8. Strain the stock and reduce it by ²/³ 9. Reserve. CAICOS BEER LAMB SAUCE INGREDIENTS 1½ tbsp pureed garlic 1½ cups white onions—finely julienned 2 bottles of Turks Head lager or any other type 1 liter of lamb demi-glace 1 tbsp rosemary—finely chopped salt and pepper to taste 2 oz cold butter DIRECTIONS 1. In a small pot, caramelize onions and garlic until golden and sweet, add beer and reduce by ½. 2. Then add the lamb demi-glace and reduce by ½. 3. Add in the freshly chopped rosemary then salt and pepper to taste. 4. Whisk in the cold butter. HERBED BREADCRUMBS INGREDIENTS 1 loaf of fresh bread—cubed and crust removed 4 cloves of fresh garlic—finely chopped ½ bunch of curly parsley—finely chopped ¼ cup rosemary—finely chopped ¼ cup fresh thyme—finely chopped 4 tbsp olive oil DIRECTIONS 1. Place all ingredients in a food processor and pulse until finely chopped. 2. An aficionado of fresh herbs and spices, Stuart cultivates his own herb garden that produces an abundant supply of basil, mint, lemongrass and a kaffir lime tree, whose extraordinary leaves are hailed for their intense pungency, particularly in Thai cuisine. Grape Tree Café was envisioned by local business man Osbourne Bodden “Ozzie” for some time since taking over the running of the family business in 2001. While serving in public office from 2005 – 2009 prohibited him from achieving his plan, when summer of 2009 rolled along and after leaving office, he proceeded to build the structure that you see today. On October 1, 2009 Grape Tree Café was opened to the public and it’s been a success story ever since. The volume of sales have continued to grow with many happy return customers, local and foreign. The café has provided a boost to the centre of historical Bodden Town and gives people a chance to come and enjoy the tranquility of the beautiful beach and evening sunsets. Grape Tree Cafe has also been used during the week to sell local lunches and this will continue. Ozzie hopes to develop the small business further as time goes on, adding some beach activities and other food items. Devaughney L. Samuels, also known as D. L. Samuels, is a self taught Cinematographer and Natural Light Photographer based in Jamaica. He is very passionate about the visual arts. As a child, he would listen to different kinds of music, and imagine the visuals through his own unique perspective. In the Summer of 2013, the first piece of integral equipment was acquired, which was a Nikon D3200 and his love for photography developed. This newfound love was nurtured, with an immersion in portrait photography. Throughout his budding career, he has encountered a number of other creative minds that have not only helped him to develop his portfolio in photography, but also have encouraged him to delve deeper into his “first love” of cinematography and hone this skill. She is currently pursuing a double major in Legal Studies and Philosophy and is a sophomore student of Roger Williams University in Bristol, Rhode Island on a full tuition grant through the International Leadership Award. Prior to her winning Miss Grand International 2015, Garcia was second runner-up in Miss USA 2015 representing Rhode Island. First Runner-up went to twenty four (24) Claire Elizabeth Parker Miss Grand Australia, while Miss Grand India Vartika Singh was Second Runner-up. I’d wager that “Local” is hardly the first word that comes to mind when you think “Nassau.” The capital of the Bahamas lures hordes of visitors, but for most that translates to an all-inclusive hotel on Paradise Island, a pristine beach and one too many Bahama Mamas. A great shame that is. New Providence—Nassau is actually not an island but the capital city of New Providence—has long been one of my Caribbean loves because I’m awed by the way it’s submerged in American culture (and, frankly, Americans) yet still so staunchly Bahamian. The local lives here, proud and strong and beautiful. Here’s how to luxuriate in it. Cable Beach, Nassau Music “Rake ‘n’ Scrape”: a gardening tactic? No, a musical genre—the musical genre of the Bahamas—that sounds like the rollicking child of calypso and hoedown. The centuries-old traditional version was made by bending a saw and scraping it with a small object; its modern iteration incorporates strains of soca and hip-hop, and can be heard on the radio, in the airport, at festivals and parties—in other words, this is not some old-time, old-folks affair but a music deeply woven into the fabric of contemporary Bahamian life. The best times to immerse yourself in it are during Junkanoo, the Bahamian version of Carnival CCL +1.89%, held around Christmas, and at the annual Rake ‘n’ Scrape festival staged on neighboring Cat Island every June.
