  • The Nestled Talent from the Furthest Point of Trinidad—MACHEL SANDY

    Machel Sandy a very vibrant and positive person took the opportunity to be interviewed and his excitement grew when I asked him the first question. How it all started? He responded without hesitation by proudly exclaiming his mother is his main influence. Machel as a young boy among a dominantly female home was eager to learn from his mother’s natural gift. He admired his mother’s craft as one of the best wedding seamstress in Guyagagri. His love for fashion budded when he took his mother scraps of cloth and created his own ideas of creation. Apart from his mother his sister was quite active in the fashion and pageant world (Miss Trinidad & Tobago 2000) who also is his role model. It was at that pageant Machel felt motivated after meeting Heater Jones & Peter Elias for the first time. Machel’s first design was constructed at age 13 for his cousin’s graduation. Thereafter he added his designs to his village Emancipation shows, Cari Vogue. It was not long after he became passionate about designing for pageants which out of four pageants he captured three best evening gowns. Machel got so excited talking about his journey he said the audience reaction to his pieces is what motivates him. At this time Cari Vogue showed a tremendous amount of interest in him and offered him the opportunity to go to London to train him. His options were thin he had no choice but to finish secondary school. One of his disadvantages was the stigma as a young male designer. It added some peer pressure but Machel boldly past that phase without being discouraged. His education is a priority he is presently finishing his Business degree at the University of the Southern Caribbean. In 2006 La Revier was the talk of the season; his anticipation was taking a very positive turn in his life. It was his first national showing of his work, at this point he was competing against top local designers. Social media became the new marketing tool for Machel which actually was like a re-birth to his vision. It was time to give a name to his brand. Fascinated with Japanese culture Masheru was an abstract combination of Machel and Japanese. Swimwear by: Machel Sandy Now working out of Sande Grande, he describes his designs as urban chic” cross between urban & couture. His bathing suits line delivers a beautiful fuchsia array of colours with deep and daring cuts. Mr Sandy is seemingly the wonders of fashion he not only culminates the talent of designing he also can do make-up artistry, hair stylist and the Managing Director of modelling agency Image Caribe’. Machel felt if he did not attempt his passion he would have living his life full of regrets. He has worked local photographers such as: Sancho Francisco, Randy Paradox, International photographer - Lang Xiao of LX Studio. Machel admires local designer Peter Elias and international designers such as Alexander mac Queen, Roberto Cavali and Heatherette. Machel currently produce every Fridays at a popular spot downtown Port-of –Spain Trinidad themed type fashion shows called Elite Fridays. His advice to young upcoming fashion designers is to “be you no matter what” Don’t allow people to break your spirit.

  • Jerk Chicken With A Twist

    A great Jamaican style dish. A spicy blend of herbs, vinegar, and a scotch bonnet pepper make this chicken dish unforgettable. Serve with rice, yum! Prep Time: 1 hour Cook Time: 15 Minutes Ready In: 1 hour 15 Minutes Servings: 4 INGREDIENTS 1 teaspoon onion, finely chopped 3 tablespoons brown sugar 4 tablespoons soy sauce 4 tablespoons red wine vinegar 2 teaspoons chopped fresh thyme 1 teaspoon sesame oil 3 cloves garlic, chopped 1/2 teaspoon ground allspice 1 scotch bonnet pepper, sliced 4 skinless, boneless chicken breast halves - cut into 1 inch strips DIRECTIONS 1. Combine the onion, brown sugar, soy sauce, vinegar, thyme, sesame oil, garlic, allspice and scotch bonnet pepper in the container of a food processor or blender. Process until smooth. Place the chicken into a large resealable bag, and pour in 3/4 of the sauce. Squeeze out excess air, and seal. Marinate in the refrigerator for at least one hour. 2. Preheat your oven's broiler. 3. Remove chicken from bag, and discard marinade. Broil chicken for 10 to 15 minutes, turning once to ensure even cooking. Heat remaining sauce in a small pan, and pour over chicken when serving.

This fruit is has high level of potassium and omega-3s which encourage moisture, elasticity and allow the skin to glow. Mash together avocado and milk or oatmeal and apply it to your face. Leave it there for 10 minutes, and then rinse it off with lots of water. An alternative mixture is mashing avocado, add honey and lemon juice. Honey is a natural antiseptic while lemon juice helps with spots and discoloration. Papaya Mask This fruit is great to clearing up whiteheads, boils and spots, as it contains the papain enzyme which is an effective in skin whitening agent. Papaya also contains alpha hydroxyl acids which help remove dead skin cells and reduce the appearance of aging. Mash together papaya and honey and apply to your neck and face. Leave on for 15- 20 minutes before rinsing with warm water. Do not use daily because of the alpha-hydroxyl as it might cause dryness and irritation of the skins. Banana Mask Bananas are rich in vitamin A, B and E and hence works as an anti-aging agent for the skin. Banana is also great for warts. If you rub the inside of a banana peel on the wart every night for a week and you will see improvement. Mix mashed banana and egg white until together and apply to skin for 30 minutes. Rinse off with warm water. Cucumber Mask Cucumber is good for treating skin eruptions and bulges and for whitening skin. It can also prevent pimples, wrinkles, blackheads and dryness of the face. To make a great cucumber mask blend 4 - 5 leafs of fresh mint and 1 cucumber together. Whisk egg white and to cucumber mixture. Apply this evenly on your face for 20 minutes and then rinse it with water and pat it dry.

Ginger root, grated fresh 1 teaspoon salt 1 teaspoon black pepper 1 12 tsps. hot sauce (optional Directions Place conch meat in a pot with enough water to cover, and bring to a boil. Cook 15 minutes. Drain, and finely chop in a food processor. Melt 2 tablespoons margarine in a skillet over medium heat, and mix in the green onions, carrot, celery, sweet potato, green banana, red pepper, and corn. Cook and stir 5 minutes. Melt remaining 2 tablespoons margarine in a large pot, and whisk in the flour to create a roux. Pour in the half and half, coconut milk, and fish stock. Mix in the ginger, and season with salt and pepper. Stir the conch and vegetables into the pot. Bring to a boil, reduce heat to low, and simmer 15 minutes. Mix in the hot sauce, cilantro and thyme. Continue cooking 15 minutes, or to desired consistency.

  • Trinidadian Callaloo and Crab Recipe

    Crab and callaloo is a delicious national dish of Trinidad and Tobago. Callaloo is a concoction of dasheen leaves, okra, crab and salt meat, along with onions, pimento peppers, scotch bonnet, green onions and thyme, all cooked in fresh coconut milk. It is a delicious and extremely nourishing dish. Here's a recipe to try at home: Ingredients: 12 dasheen (eddo/taro) leaves, chopped (or spinach) 1 doz. okra, chopped into 1-inch pieces 2 Tsp salted butter 1 ham bone or pickled pig tail or any piece of salted meat (beef or pork), cut into 3 pieces2 large crabs cut into quarters 4 pimentos chopped (mild pepper) 1 whole scotch bonnet pepper 3 sprigs fresh thyme 2 cloves garlic, crushed 1 large onion, chopped 1 chicken bouillon, crushed 3 cups water 1 cup coconut milk Salt to taste Preparation: Cook ham bone or pig tail if used until it is soft. In the meantime, chop dasheen leaves (remove skin from the stalks before chopping) or spinach, okra and onion and set aside. Then prepare crabs (live), clean and wash thoroughly discarding backs and break into fairly large pieces. In a skillet melt butter then add all ingredients except the scotch bonnet pepper and salt cook on medium high heat for 15 minutes. Add whole hot pepper. Re-cover pot and let cook for another 15 minutes or until everything is cooked through and the vegetables are very soft. Remove the hot pepper and crab (and salt meat) from the pot. Use a swizzle stickor an immersion blender to puree the mixture, until you get a smooth thick liquid. You can do this in a food processor if you do not have an immersion blender or swizzle stick. Then combine spinach mixture with crabs and simmer slowly for about 20 minutes. Taste for seasoning (salt) and adjust if necessary. Pour soup into a bowl, garnish with hot pepper and crab. Serve as a soup to be eaten by itself or eat the Callaloo with rice, dumplings or Ton Ton and salt fish souse **Note: Dumplings and Tanias may be added at simmering stage.** Enjoy the delicious flavors of Trinidad and Tobago with this simple and flavorful recipe for crab and callaloo!
