Recipe: Jamaican Sweet Potato Pudding


Jamaican Sweet Potato Pudding Recipe

If you want to try a new and exciting dessert recipe, Jamaican sweet potato pudding is a great choice! It's moist and rich, with a decadent flavor that will have your mouth watering in seconds.


Traditionally, we use a coal stove to bake this pudding so you can experience the “hell a bottom, hell a top and hallelujah in the middle”. If you don’t have a coal stove, you can bake these in the oven for 1 hour at 350 degrees.



Ingredients

Step 1

Add to blender

3 lbs. White sweet potato (Boniato)

1 lbs. Yellow Yam


Step 2

Combine and reserve 1 cup to make custard top

4 Cups Coconut milk

1 Teaspoon Ground Nutmeg

1/2 Teaspoon Ground Cinnamon

1/2 Teaspoon Ground Ginger

1/2 Teaspoon Salt

2 Cups Brown Sugar

1/2- Stick of unsalted butter(Melted)

1-Tablespoon Vanilla extract

1-Teaspoon Mixed Spice Essence

1/2- Teaspoon Ground Cinnamon

1/4- Cup White Rum


Step 3

Combine step 1 and 2 in the blender.


Step 4

Pour mixture in large bowl. Combine with 2 cups of flour and 1 cup of coconut flakes.


Bake for 1 hour on 350. Add 1 cup of mixture from step 2 to the top and bake for 15 minutes on 375.
